Roast Pumpkin Salad


Saw this recipe and decided to give it a try since I have some extra unused butternut pumpkin from last week. It is very easy to prepare and not much ingredients required. The only thing I needed to buy was the fetta cheese. The mint was a day's old from my SIL's garden. I have pine nuts readily in my freezer (I freeze all my nuts to keep them from being rancid).

This is another easy and great-tasting recipe. I really love this salad but might have to add a little less balsamic vinegar because hubby do not really like it. Great salad to bring to gatherings (make it ahead of time if you like) for all to enjoy!
